Cinnamon

True Ceylon-style cinnamon (Cinnamomum verum) — not the cassia commonly sold as cinnamon — grown on a small estate in Idukki. The bark is harvested young, peeled by hand, and rolled into the characteristic paper-thin quills as it dries. Sweeter, lighter, lower in coumarin than cassia.
