High-Curcumin Turmeric Powder

Pratibha-variety rhizomes grown on smallholder plots in eastern Wayanad. Boiled briefly to set the colour, sun-dried for ten days, then stone-ground at low temperature to preserve the volatile oils. Deep ochre, faintly resinous, with a curcumin content well above commodity grade.
